To make chilli oil, you will need the following ingredients:

– 100g fresh chillies (adjust the amount based on your spice preference)
– 50g Sichuan peppercorns (optional, for a numbing sensation)
– 50g peanuts (optional, for added crunch)
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– 2 tablespoons vegetable oil
– Salt to taste

Instructions

1. Prepare the fresh chillies: Start by washing the fresh chillies thoroughly and pat them dry with a clean kitchen towel. Remove the stems and seeds from the chillies, as these parts can be quite spicy. You can also cut the chillies into smaller pieces if desired.

2. Toast the Sichuan peppercorns: In a small skillet, heat the Sichuan peppercorns over medium heat until they start to brown and release their aroma. Be careful not to burn them, as this will make the oil bitter. Once toasted, set the peppercorns aside to cool.

3. Roast the peanuts: In the same skillet, add the peanuts and roast them over medium heat until they turn golden brown and fragrant. Remove from heat and set aside to cool.

4. Heat the oil: In a wok or a large skillet, heat the vegetable oil over high heat. Once the oil is hot, add the toasted Sichuan peppercorns and fresh chillies. Stir-fry for about 30 seconds to 1 minute, or until the chillies turn slightly brown and fragrant.

5. Add the soy sauce and sesame oil: Lower the heat to medium and add the soy sauce and sesame oil to the wok. Stir well to combine.

6. Season with salt: Taste the chilli oil and adjust the seasoning with salt according to your preference.
